The white truffle, or better known as the Alba white truffle is the most prized truffle, also because it is impossible to cultivate . It comes in various shapes, from globular to flat, but the numerous depressions on the external wall (peridium) tend to give it a rather irregular appearance.

White truffles are externally smooth to the touch and velvety, with shades ranging from cream to yellow ochre, while the internal surface (gleba) is light with hazelnut veins and possible pink reflections.
Its scent is unmistakable and famous, it has characteristic notes, in which the flowery honey, the pungent garlic and the woody mushrooms blend together.
The white truffle prefers humus-rich woods. It grows in particular in symbiosis with oaks, limes, willows and poplars, whose growing soil has high quantities of calcium and a constant humidity rate for a good part of the year.

- WE COLLECT IT IN WOODS OF: white willow, white poplar, black poplar, linden, black hornbeam, oak, oak, downy oak, cistus
- COLLECTION AREA: Piedmont, Emilia Romagna, Tuscany, Umbria, Marche, Lazio, Abruzzo, Molise, Istria
- PERFECT COMBINATION: eggs, tagliolini or some other egg pasta, fresh dairy products
- STORAGE: Well preserved at +4° C for 5-7 days
