Generally very fragrant, the uncinate truffle , commonly known as the black autumn or burgundy truffle , is externally very similar to the summer truffle . The gleba is different, however, and is dark brown in color with numerous very marked white veins.
The uncinate truffle is a culinary treasure highly prized in many regions, particularly in the Mediterranean areas and in some parts of Europe.
Its intense earthy fragrance and strong flavor make it a precious ingredient in gourmet cuisine. It is often used to flavor dishes such as risottos, fresh pasta, omelets and sauces. This truffle is harvested mainly during the autumn season, from September to December, when its aromatic characteristics are at their peak.
